Product Overview

Trisodium citrate dihydrate (E331) is the sodium salt of citric acid. It performs three functions in food systems: acidity regulation, emulsifying salt action and metal ion chelation. It is the most widely used citrate in processed cheese, beverages and meat products.

Selection and Handling Notes

• Used together with citric acid it forms a stable buffer system that holds pH within the target range.
• Its strong chelating capacity suppresses iron and copper catalysed oxidation, extending shelf life.
